The SnapScan backend sometimes has problems with the Acer 310, and I've
heard about this one before but haven't been able to track down the
problem.

Which version of SANE are you using, and which version of the SnapScan
backend? You might try out the two extensions to version 0.7 of the
backend that are at

http://www.cs.ualberta.ca/~charter/SnapScan/snapscan.html

The second extension won't align the red, green and blue channels
correctly for your scanner, but it may fix the garbling. Try those
out if you haven't already and let me know what the results are.
